Polipo con Patate allo Zafferano Octopus with Capers, Black Olives Cherry Tomatoes & Saffron Potatoes

Polipo con Patate allo Zafferano
Octopus with Capers, Black Olives Cherry Tomatoes & Saffron Potatoes

Serves 6

1 lb. octopus
4 oz. chopped onions
3 oz. cherry  tomatoes
1 oz. capers
1 oz black olives
1 oz chopped parsley
6 tbsp extra virgin olive oil
1 lb saffron potatoes cut in small cubes

1. Poach the octopus in lightly salted water until tender. This will take around 1 hour of simmering. Let it cool off then cut the fish in small cubes

2. Put extra virgin olive oil in a sauté pan. Add onions, potatoes and octopus and cook for 2 minutes.  Then add parsley, tomatoes, and capers and cook for 1 more minute.

3. To serve: Add a little salt and pepper to taste.  Place on a bed of bibb lettuce, arugula or romaine and drizzle with extra virgin olive oil.

4. To make the saffron potatoes:  Place potatoes (cut up into small pieces) in a pot of cold water.  Add saffron threads and place on the stovetop.  Bring to a boil and cook until fork tender.

Fruits: Apples, bananas, cantaloupe, citrus fruits, watermelon, cucumbers and tomatoes

Beans and bean products: Alfalfa sprouts, soy milk, tofu, tempeh

Grains: Amaranth, barley, millet and wheat

Herbs: Cilantro, dandelion, lemon balm, mint and marjoram

Vegetables
: Asparagus, broccoli, cauliflower, celery, cucumber, cabbage, lettuce, radish, sweet corn, Swiss chard, summer squash and zucchini

I was just randomly browsing through the Dunkin Donuts website and I noticed the perfect gift!!!

They are offering personalized giftcards! You can place your own picture on the giftcard and keep reloading it. I put a picture of me and my friend drinking coffee on it, and now every time I pull it out I smile. This is the best idea since their new caramel mocha latte!

The personalized picture cost $4.50 and it comes with a card! I sent one to myself so I chose something simple, but they have many different categories (birthdays, celebration, anniverary) and they will send it to the person for you with the return address being your own address! You can choose to send it by $.46 cent mail and I got it 4 days later!
